On Life: Two of my three sisters are visiting and it’s been lovely. I’ve been trying to talk them both into moving to NC, but they keep throwing out silly excuses…like jobs and commitments, for why they can’t. Obviously, I’m kidding, but I would love if they lived in the same town, or state even. I’d love to have weekly get-togethers with them, or monthly potluck dinners or cookouts. Do you live near family and get to see them regularly? Color me jealous, but happy for you too.
Anyhow…in between dropping hints of how great NC is, we’ve been cooking, eating, drinking wine, watching ice skating and old SYTYCD routines, eating, watching movies, and eating. 🙂 We tried a new recipe, Crock Pot Rotisserie Chicken. Yum! My oldest sister wanted to try the recipe with the idea that if it was any good, it was something I could throw in the crock pot, head downstairs to write, and not have to worry about dinner at the end of the day. Love. It. I will be on the lookout for a few more crock pot recipes, but here is the one we tried…
Crock Pot Rotisserie Chicken:
1 whole chicken
Prep the way you prefer (aka rinse it)
Rub the chicken with olive oil
Mix up your favorite spices. We used granulated garlic, thyme, basil, salt, and pepper. Rub onto skin.
Broil the chicken for a few minutes until slightly crispy. (Can also broil after chicken has cooked to crisp the skin up a bit. Think I’ll try that next time.)
Place the chicken on top of balled up tinfoil in the crock pot. Cook on low for 6-9 hours. Ready when proper temp for chicken is achieved.
Next time, I might try cooking the chicken on some sliced potatoes and seeing if I can make mashed potatoes when the chicken is done.
On Writing: Back to work after spending a few days with my sisters. But, I don’t have to worry about dinner tonight, because…leftovers!
