Mixing it Up in the Kitchen

Sharing a recipe 🙂 It can get a bit boring when you’re trying to eat healthy but busy working and don’t have time to get creative in the kitchen. Or…if you’re like me and don’t like to cook. Well, I take that back. I don’t mind cooking if I can drink a glass of Cabernet while I’m cooking. Alas, weeks into a Whole30 with no wine, sugar or grains? Yeah, no. Cooking is not as fun. Anyway, I found a new, simple recipe on Pinterest that I tried tonight and it was very good. It has bacon, so how could it be bad, right? So I thought I’d share.

Bacon-Parmesan Spaghetti Squash

  • 1 spaghetti squash- roast in oven
  • 1 lb. Bacon, cut up and fried. [Or baked in oven & then cut;) Who cares how you do it! It’s bacon! It’s all good.]
  • 1 cup parmesan cheese
  • Butter- about 1/2 stick
  • Salt & Pepper to taste

I cut the squash in half. Scooped out the seeds and roasted it at 450 for 45 minutes. The recipe has you cut it another way, but it seemed like more work. No matter how you roast the squash, it ends up separating easily into “spaghetti” strands with a fork. Place the strands in a dish. Add the butter and stir to melt. Add the bacon, cheese and mix again. Salt & pepper to taste. That’s it. See? Easy. I also grilled some garlic chicken and sliced it up and tossed that in too.
