Making Omelettes

On Writing: As much as I like revising, I have found a downside to adding extra scenes to a manuscript. You know that expression, there’s more than one way to make an omelette? Some people can happily jump around and write scenes as the inspiration strikes them. My normal preference for writing is to write my scenes in order. I start at the beginning of the book and write through to the end. I like seeing the connection and continuity between scenes as I write. Now, writing a few scenes to slip into the middle of my book, I’m missing that feeling. I hope it’s just the different method and when I go back to read them they’ll fit in and flow seamlessly like they needed to be there all along. On that hope, I’m pressing on today, hoping to get another scene finished.

On Life: Our family (well, three of us) have a new obsession these days. I’ve written about our primal/paleo diet before, yes? I switched to a mostly primal diet (no wheat or sugar) to eliminate the allergy/hives/benadryl-fuzzy head cycle I was on. Happygirl eats mostly primal for the gluten free benefits since gluten seems to hurt her stomach. And the Engineer went along for the ride to lose a few pounds and so he could eat what we were cooking 😉

Our new obsession? The Colorado omelette at IHop. Holeeee Cow, it is seriously amazing. Like right up there with bacon, bacon cheeseburgers wrapped in lettuce leaves, bacon, a great steak, bacon and really good dark chocolate.

Here are the “magic ingredients” that make this omelette a miracle on a plate: bacon, sausage, beef brisket, ham, onions, green peppers and Cheddar cheese. Served with a side of salsa. 
And they are huge! So we can order one and split it. Now, here’s the really extra great part…when we had leftover beef brisket from Happygirl’s graduation party…it dawned on us we could make these at home!  So we did. A lot. Until we finally had to say…put down the beef brisket and eggs and back away slowly. Okay, not really. The truth is we ran out of beef brisket. Anyway, I just thought I’d share my new addiction  yummy breakfast with y’all.
